Mmmmmmm Vegetarian meals that are keeping us alive!



Zucchini Lasagna is an amazing dinner dish that usually has a good amount of leftovers (except) when Nick is starving and eats half the pan in one meal...)
Takes a lot of prep time getting all the zucchini ready to go, and then about an hour in the over.  But boy oh boy its yummy, even reheated!

So after weeks of traveling we have been soon most of our own cooking, and eaten out a little. One thing we have really noticed is that once you get out west in the rural areas there is not much we can stop and eat. So we have been relying heavily on the old faithful....crunchy peanut butter and jelly!!!

Our original plan was to stop only at vegetables stands which would be cheaper and fresher. We started out good when in the southeast, but having trouble finding then easily throughout Texas and New Mexico. I imaging it will be easier in California and down in baja. Otherwise we've been just stopping at grocery stores, an found a great chain called sprouts. So all in all its been pretty easy to find what we need.

The best lesson so far is DO NOT undercook the beans!!!! We have some dried black beans to eat, which we did before our trip a lot. On the propane stove it cooks so hot that I have not mastered how long to cook the beans and undercooked the last round. And man, we have been stinking up the car!!!! So not gonna make that mistake again.
